  • 1 8 ounce container plain soy yogurt “or regular plan yogurt”
  • 1 large cucumber, seeded, finely diced, and squeezed dry in a paper bowl
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons minced fresh dill
  • 10 fresh mint leaves, minced
  • salt and pepper to taste

Combine yogurt, cucumber, garlic, lemon juice, dill, and mint in a medium bowl, season to taste with salt and pepper.
